Inspection Comments

E&D, class 3 10+ Plumbing inspection was conducted with the superintendent, Kim H. construction is at 70% completion. Scheduled for final construction inspection on 5/16/23. Please address the following items prior to the next inspection: 1. Provide an overhead cover at the soda fountain self-service area. Overhead cover can be a soffit or cloud above the area. 2. Provide a reduced pressure zone assembly at the water connection point of each soda carbonator. Conduits and fittings after the backflow preventer (ASSE 1013) must be PEX or stainless steel. Do not use copper or brass alloy downstream from the backflow preventer. Provide a drain cup for each backflow device. Drainpipe must be rigid and indirectly discharge into a floor sink with 1” air gap from the finished floor. 3. All backflow preventers must be installed at least 1 foot but not more than 5 feet above grade, visible and in an easily accessible location for monitoring and testing. Certify all testable backflow devices and provide reports. 4. Provide a vented dual check valve backflow preventer (ASSE 1022) at the water connection point of each coffee/ tea brewer or hot water dispenser. These are not testable devices so replace them whenever they leak. 5. All drainpipes from 3-comp sink, food prep sink, drip trays, ice machine, etc. must be rigid and indirectly discharge to a floor sink with minimum 1” air gap from the finished floor. 6. All cooking equipment must be 6 inches inside the hood. 7. Provide adequate shelving to ensure all foods, drinks, single service/ single use items must be store at least 6 inches off the floor. 8. Provide lockers for staff. 9. Provide drink/ food storage area for staff. 10. First aid kits, chemicals, personal items must have designated area and not among foods/ drinks to be served to the consumers. 11. Person in charge/ manager must be a certified food protection manager and available at the site during all operational hours. Food service workers must have food handlers’ certifications. All licenses, managers and food handlers certifications must maintain on site for inspection purpose. No county legal action will result from this inspection. Priority foundation violation is a minor violation that does not directly contribute to an increased risk of foodborne illness but failure to correct this violation may lead to the occurrence of a priority violation.
e.g.- Hand washing soap and paper towels not available at hand wash sink (may lead directly to food employees not properly washing hands when required)
Core violation is a minor violation that relates to general maintenance and sanitation.
e.g. -No sign reminding employees to wash hands
Verification Visits are inspections of establishments enrolled in the MCESD Cutting Edge Program, which requires an enhanced food safety program and ongoing demonstration of active managerial control. Verification Visit inspections found in compliance with Cutting Edge program requirements receive an “A” grade.
