OC Inspection - E&D Class 3 This inspection was conducted with the facility manager. A PDF copy of this inspection report was emailed to Kenneth M. at the time of this inspection. This facility is currently under construction with related permit RM-10564 No county legal action will result from this inspection. Correct the following prior to final permit approval; 1. Provide the missing stainless steel sheet below the exhaust hood. Also, provide metal cove base instead of vinyl cove base beneath the exhaust hood. 2. Provide a drywell filled with gravel for the walk-in unit condensate that drains outside. Provide a P-trap at the end of the drain pipe. 3. Provide metal cove base at the exposed floor/wall juncture on the front, exposed portion of the walk-in unit. 4. Provide a new door seal for the walk-in unit. 5. Test and certify the RPZ backflow prevention device for the soda fountain carbonator. 6. Provide a sneeze guard for all exposed food and food prep along the front counter. 7. Provide a stainless steel side splash between the food prep sink and the adjacent three compartment sink. 8. Patio mister systems require a certified, drinking water safe RPZ backflow prevention device for the water supply lines that feed them

e.g. - Food employees do not properly wash hands when required
Priority foundation violation is a minor violation that does not directly contribute to an increased risk of foodborne illness but failure to correct this violation may lead to the occurrence of a priority violation.
e.g.- Hand washing soap and paper towels not available at hand wash sink (may lead directly to food employees not properly washing hands when required)
Core violation is a minor violation that relates to general maintenance and sanitation.
e.g. -No sign reminding employees to wash hands
Verification Visits are inspections of establishments enrolled in the MCESD Cutting Edge Program, which requires an enhanced food safety program and ongoing demonstration of active managerial control. Verification Visit inspections found in compliance with Cutting Edge program requirements receive an “A” grade.
