Inspection Comments

Advisory - inspection for ownership change. Establishment is not open or operating at this time. Establishment plans to open around the 4th of July. Correct the following items prior to permit approval: 1. Repair or replace sprayer at 3-compartment sink. 2. Re-plumb 3-compartment sink so that all drains go to the floor sink with a minimum 1” air gap. 3. Repair flooring throughout kitchen areas. 4. Shorten drain line from water filter at ice machine so it has a minimum 1” air gap at floor sink. 5. Elevate drain line from ice machine so it has a 1” air gap at floor sink. 6. Seal all small holes in walls with caulk or silicone. 7. Ensure all refrigeration is turned on and holding at 41*F or less, freezers at 0*F or less. 8. Provide a brighter light bulb in walk-in freezer. 9. Provide a centralized light inside main walk-in cooler. 10. Provide lighting for back area of smoker. 11. Replace all other burnt out or missing light bulbs in establishment, including outdoor storage areas. 12. Secure windows in side dining area shut with an L-bracket or similar. 13. Re-seal sinks to walls with caulk or silicone. Remove old sealant first. 14. Remove unused line from removed chemical dispenser at 3-comp sink. 15. Remove plastic wrap in areas around smoker. Use zip ties or other approved means of securing lines. 16. Re-finish rusted shelf (bottom shelf of prep table near walk-in). 17. Fill in gaps at cove base throughout establishment. 18. Clean brick wall. 19. Repair wall damage, namely wall between front service area and smoker. 20. Either fill/seal hole in ceiling of walk-in beer cooler, or replace sprinkler head (consult fire service company). 21. A new soda system will be installed – ensure all drain lines are hard piped, sloped to drain, with a 1” air gap at floor sink. Ensure any exposed wood as a result of cutting through counter is properly sealed. 22. After new soda system is installed, have RPZ for soda system tested. RPZ backflow must be tested yearly. Maintain certificate on site for inspection. No County legal action will result from this inspection. Report emailed.

e.g. - Food employees do not properly wash hands when required
Priority foundation violation is a minor violation that does not directly contribute to an increased risk of foodborne illness but failure to correct this violation may lead to the occurrence of a priority violation.
e.g.- Hand washing soap and paper towels not available at hand wash sink (may lead directly to food employees not properly washing hands when required)
Core violation is a minor violation that relates to general maintenance and sanitation.
e.g. -No sign reminding employees to wash hands
Verification Visits are inspections of establishments enrolled in the MCESD Cutting Edge Program, which requires an enhanced food safety program and ongoing demonstration of active managerial control. Verification Visit inspections found in compliance with Cutting Edge program requirements receive an “A” grade.
