Equipment Inspection - Meat Market This inspection was conducted with the owner and general contractor. A PDF copy of this inspection report was emailed to Carlos D. at the time of this inspection. No county legal action will result from this inspection. The following items must be corrected prior to final permit approval; 1. The hot water faucet for the mop sink is installed below the flood rim of the sink. Install the hot water faucet above the flood rim of the mop sink like the cold water faucet is. 2. Provide hose bib vacuum breakers for the hot and cold water faucets on the mop sink. 3. Remove all the trash and debris from the mop sink and water heater area so that the mop sink is accessible. Also remove the excess trash and debris from outside the main back door to the facility. 4. The three compartment sink is currently directly connected to the sewer. Provide an indirect drain pipe that empties into the nearby floor sink with a minimum 1 in. air-gap between the end of the pipe and the flood rim of the floor sink. 5. The hot and cold water are reversed on the food prep sink faucet. Provide hot on the left valve and cold on the right valve of this faucet. 6. The drain pipe for the food prep sink has an opening for a condensate drain line that cannot be installed on this sink. Provide a drain pipe for this sink that does not have this drain pipe opening. 7. Provide minimum 1 in. air-gaps between thee ends of the food prep sink drain pipe and the walk-in refrigerator condensate drain pipe and the flood rim of the floor sink they drain into. 8. Seal the spaces between both walk-in units and the surrounding walls with metal flashing. 9. Provide a metal cove base at the floor/wall junctures on the outside of both units. 10. Cover and seal the bare wood at the floor threshold of the walk-in freezer. 11. Remove the duct tape from the wall inside the walk-in refrigerator and cover any holes with metal so that the wall surface is smooth, non-absorbent and easily cleanable. 12. Provide washable ceiling tiles instead of acoustical ceiling tiles in the walk-in storage room of the meat market and in the mop sink/walk-in freezer room. 13. Provide self-closers for all back doors and for the restroom door. 14. Replace the carpet and wood wheel assemblies beneath the two meat cases that have these assemblies. Wheels or legs for the meat cases must be metal or other material that is smooth, non-absorbent and easily cleanable.

e.g.- Hand washing soap and paper towels not available at hand wash sink (may lead directly to food employees not properly washing hands when required)
Core violation is a minor violation that relates to general maintenance and sanitation.
e.g. -No sign reminding employees to wash hands
Verification Visits are inspections of establishments enrolled in the MCESD Cutting Edge Program, which requires an enhanced food safety program and ongoing demonstration of active managerial control. Verification Visit inspections found in compliance with Cutting Edge program requirements receive an “A” grade.
