Inspection Comments

Equipment inspection. This is the first walk-though for construction. The establishment has opened prior to opening final permit approval. The permit is not approved. You are hereby notified that you are operating this establishment in violation of the MCEHC. Per Chapter 1, Regulation 4(a) “No person shall conduct an operation or operate an establishment for which a permit is required without holding the necessary and valid permit to do so, unless otherwise specified in this Environmental Health Code.” County legal action may result due to violations observed during this inspection. Correct the following list of items for final permit approval: (1) Re-connect the self closure on the back door. (2) Provide a spill-proof, pressure vacuum breaker on the water line at the tilt kettle. The backflow must be tested. Provide test report (3) Provide a second swing arm faucet for the 3-comp sink. Swing arm must reach all 3 compartments. (4) Provide a vent collar at the oven exhaust ceiling penetration (5) Flash off the oven where it meets the back wall. (6) Provide additional shelving/dunnage racks in the walk-in units to maintain product off the floor. (7) Provide an NSF approved food prep sink or remove the limes, lemons, fresh berries, etc. (8) Provide 3/8 radius coved base at the front service counter (9) Paint the exposed bare wood located under the service counters. Report emailed County legal action may result from this inspection.

e.g. - Food employees do not properly wash hands when required
Priority foundation violation is a minor violation that does not directly contribute to an increased risk of foodborne illness but failure to correct this violation may lead to the occurrence of a priority violation.
e.g.- Hand washing soap and paper towels not available at hand wash sink (may lead directly to food employees not properly washing hands when required)
Core violation is a minor violation that relates to general maintenance and sanitation.
e.g. -No sign reminding employees to wash hands
Verification Visits are inspections of establishments enrolled in the MCESD Cutting Edge Program, which requires an enhanced food safety program and ongoing demonstration of active managerial control. Verification Visit inspections found in compliance with Cutting Edge program requirements receive an “A” grade.
