Inspection Comments

First inspection walk through with the superintendent. The following items were discussed: 1). Floor sink for the walk-in condensate is in the right place. 2). HW & CW will be plumbed in at the mop sink + an extra CW for the chemical dispenser. 3). Opposite wall from the mop sink, HW and CW will be plumbed in for the sink in that location. 4). Coved base will be required in the bar area. 5). Bar top substrate will need to be caulked in and finishes out. 6). Please note that the concrete floors in walk-in, waitress station, kitchen and restrooms needs to be sealed. Provide SC-2 not SC-1 7). Paints used in the restroom will need to be washable. 8). All equipment and fixtures connected to a water supply must be equipped with an approved backflow prevention device or air gap to prevent backflow. a. Provide backflow protection for the following equipment pieces connected to the water supply. (608.16) 3 i). Double Check valve on the water supply lines to the Perlick Sinks with spray hoses B8, elevation 16, page FS6.2. This, due to the fact that this outlet can get and remain submerged. You can also leave the hoses off. ii). Reduced Pressure Zone backflow on the water line to #5. Future mister connection page P2.0, detail 1. iii). All other backflow devices per plan. 9). Fly fans over the sections doors will need to be microswitch activated if that is not planned. 10). I can not determine the light intensity if the walk-in. If the unit only g=has a jelly jar at the door, then install a secondary fixture in the walk-in. No County legal action will result form this inspection. E-mailed inspection report.

Priority foundation violation is a minor violation that does not directly contribute to an increased risk of foodborne illness but failure to correct this violation may lead to the occurrence of a priority violation.
e.g.- Hand washing soap and paper towels not available at hand wash sink (may lead directly to food employees not properly washing hands when required)
Core violation is a minor violation that relates to general maintenance and sanitation.
e.g. -No sign reminding employees to wash hands
Verification Visits are inspections of establishments enrolled in the MCESD Cutting Edge Program, which requires an enhanced food safety program and ongoing demonstration of active managerial control. Verification Visit inspections found in compliance with Cutting Edge program requirements receive an “A” grade.
