OC Advisory - E&D Class 4 This inspection was conducted with the owners. This facility is not currently in operation. A PDF copy of this inspection report was emailed to Raul G. at the time of this inspection. No county legal action will result from this inspection. Correct the following prior to final permit approval; 1. There is currently only a 40 gallon capacity water heater installed. Provide a minimum 50 gallon capacity water heater. 2. There is an open sewer pipe beneath the three compartment sink. Cap off and seal all unused sewer pipes. 3. The three compartment sink is currently directly connected to a mop sink and then to the sewer system. The three compartment sink must have a separate, indirect connection to the sewer through a hub drain assembly with a P-trap or a floor sink. There must also be a minimum 1 in. air-gap between the end of the drain pipe and the flood rim of the hub drain or floor sink. 4. The left faucet for the three compartment sink currently has only a sprayer that extends below the flood rim of the sink. The left faucet requires a faucet neck that is capable of reaching and filling the left compartment of the sink. The sprayer must be repaired so that it maintains a minimum 1 in. air-gap between the end of the sprayer and the flood rim of the sink. 5. Dedicated hand sinks with hot and cold water are required to be visible and accessible to all separate work areas. Three dedicated hand sinks will be required. One in the front beverage prep area, one in the cook line area and one in the back ware washing area. 6 The ice machine is currently draining into a sump pump that pumps to a nearby bucket. Relocate the ice machine so that it drains separately and indirectly into a floor sink with a minimum 1 in. air-gap between the end of the drain pipe and the flood rim of the floor sink. 7. A dedicated food prep sink with hot and cold water will be required. This sink must also have a separate drain pipe that empties into a floor sink with a minimum 1 in. air-gap. 8. Remove the ceiling fan from directly above the front beverage prep area. 9. Provide washable ceiling tiles above the front beverage prep area where acoustical tiles are currently installed. 10. Caulk and seal the space between the front countertop and the supporting wall underneath. 11. Provide adequate drainage to a floor sink for the steam table. 12. Provide strainers for the floor sinks.

Core violation is a minor violation that relates to general maintenance and sanitation.
e.g. -No sign reminding employees to wash hands
Verification Visits are inspections of establishments enrolled in the MCESD Cutting Edge Program, which requires an enhanced food safety program and ongoing demonstration of active managerial control.
