Fd-23-03288. Class 3 E&D 10+ Seating. Operating at time of inspection. OC re-inspection conducted. New owner re-inspection conducted with owner, Danny. Emailed report to Mayra. Items that have not been addressed yet, will need to be addressed with 14days: 1. Provide an ASSE 1013 reduced pressure backflow device upstream of RO system. RP will need a drain cup plumbed to a floor sink with 1 inch air gap at floor drain. Or remove RO system. 2. Provide an ASSE 1022 dual check valve for espresso machine. Must be stainless or plastic since it is fed by RO. 3. Ensure all drain lines (prep sink, 3 compartment sink) have 1 inch air gap above finished floor. 4. Since last inspection, establishment has added a glass rinser. Provide an ASSE 1013 reduced pressure backflow device upstream of Rinser. RP will need a drain cup plumbed to a floor sink with 1 inch air gap at floor drain. Or remove Rinser. A certified food manager is required at time of approval. If not already obtained, please obtain your certified food manager certificate from an ANSI approved testing company. All other food handlers must obtain ANSI approved food handler certificates. No County legal action will result from this inspection.

Core violation is a minor violation that relates to general maintenance and sanitation.
e.g. -No sign reminding employees to wash hands
Verification Visits are inspections of establishments enrolled in the MCESD Cutting Edge Program, which requires an enhanced food safety program and ongoing demonstration of active managerial control. Verification Visit inspections found in compliance with Cutting Edge program requirements receive an “A” grade.
