Inspection Comments

First walk trough of the establishment with the superintendent. Store finishes are about complete except for some tile work in the restrooms. The following items were discussed: 1). Two water heaters will be installed on the wall next to the mop sink, install with condensate lined and T&P and condensate will be led to the floor sink. The pH of the condensate is about 2.8 or so so use PVC or CPVC for the condensate lines. 2). Please install a reduced pressure principle backflow valve at the connection to the soda system. Install in a accessible location between 12 inches and 5 feet and install with hub drain and lead to the floor sink. Do not install copper r brass downstream and have the valve tested and certified before final inspection. 3). Separate water line was already installed at the mop sink. 4). Please install a splash guard between the three compartment sin and the three compartment sink. Not in plan. 5). Restroom will have a self closing door. 6). Hoods will be sealed at the wall junctures. 7). make sure to seal up all walk-in penetrations, use polyurethane foam to create a good seal. No County legal action will result from this inspection. Core violation is a minor violation that relates to general maintenance and sanitation.
e.g. -No sign reminding employees to wash hands
Verification Visits are inspections of establishments enrolled in the MCESD Cutting Edge Program, which requires an enhanced food safety program and ongoing demonstration of active managerial control. Verification Visit inspections found in compliance with Cutting Edge program requirements receive an “A” grade.
