Inspection Comments

Prefinal walk through with the franchisee. The following items were discussed: 1). Where open throughout, including in the bathroom the FRP will be sealed at the base tile juncture. 2). The FRP will be caulked at the door frame where open. 3). Install a self closer on the inside restroom door. 4). Install a gasket or rubber door stoppers in the door frame. 5). The condensate will need to be led indirectly to a floor sink, at this point a sump pump will be the best. Note that the pump may not be installed in the cooler. It may be the best to install it in the office area. 6). The cooler will be flashed off to the ceiling and the wall. 7). The wall in front of the walk-in will be finished out. 8). Fill in all penetrations through the walk-in walls and ceiling and finish out smooth on both sides or where possible install escutcheon plates. 9). One clean out cover is missing to the left of the east wall hand wash sink. 10). Please provide backflow tests for the installed backflow valves. 11). Please provide a rigid drain line for the ice machine, lead along the wall to the floor sink so you keep the floor accessible for cleaning.One hand wash sink 12). One of the hand sinks is missing and aerator. 13). For the west wall hand sink, where the FRP is cut wide at the drain escutcheon, please caulk and finish out smooth. 14). Hoods will need to be sealed at the underside and side wall junctures were open. It is advised to install a door sweep on the exterior restroom door. Refrigeration equipment will need to be on and holding at proper temperatures. At time of final inspection make sure that all equipment is in place. Provide hot and cold water at all the sinks. No County legal action will result from this inspection. E0mailed inspection report.

e.g.- Hand washing soap and paper towels not available at hand wash sink (may lead directly to food employees not properly washing hands when required)
Core violation is a minor violation that relates to general maintenance and sanitation.
e.g. -No sign reminding employees to wash hands
Verification Visits are inspections of establishments enrolled in the MCESD Cutting Edge Program, which requires an enhanced food safety program and ongoing demonstration of active managerial control. Verification Visit inspections found in compliance with Cutting Edge program requirements receive an “A” grade.
