Inspection Comments

Plumbing inspection was conducted without appointment. Met Gary F., the superintendent at the site. Construction is at 30% completion. In-wall plumbing had been done. Walls are closed, walk-in unit had been installed. Provided ATC letter and permitting guidance documents to Gary. Please address the following items prior to the next inspection: 1. Provide 2 Rheem 95 DV 11-199 tankless water heaters to meet the hot water demand in the facility. 2. Provide a hand washing sink inside the craft room. Sink must have side splashguards, hot and cold water. 3. Provide a reduced pressure zone (RPZ) assembly (ASSE 1013) at the water connection point of the stack ovens. Conduits and fittings after the RPZ must be stainless steel or PEX. Do not copper or brass alloys after the RPZ. Provide a drain cup for the vent port of the backflow device. Drainpipe must be rigid and indirectly discharge to the nearest floor sink with minimum 1” air gap from the finished floor. 4. Provide a double check (DC) assembly (ASSE 1015) for the water connection point of the chiller. 5. All backflow preventers must be installed in a visible, un-obstructed and easily accessible for monitoring and service. 6. Certify all testable backflow preventers and provide reports. 7. Provide minimum 1” air gap from the finished floor for all drainpipes from drip trays, 3-comp sink, water heater, etc. 8. Provide a micro-switch activated air curtain over the delivery door. 9. Provide an additional water stub out with angle stop at the mop sink for chemical dispenser. 10. Provide several coats of semi-gloss paint on the substrate of the countertop. 11. Caulk and seal all gaps, cracks and penetrations throughout. This includes inside walk-in unit, behind sinks, 12. Fill gouges on the concrete floor inside the walk-in unit. No County legal action will result from this inspection. Emailed the report to the owner and sent to superintendent, Gary. Priority foundation violation is a minor violation that does not directly contribute to an increased risk of foodborne illness but failure to correct this violation may lead to the occurrence of a priority violation.
e.g.- Hand washing soap and paper towels not available at hand wash sink (may lead directly to food employees not properly washing hands when required)
Core violation is a minor violation that relates to general maintenance and sanitation.
e.g. -No sign reminding employees to wash hands
Verification Visits are inspections of establishments enrolled in the MCESD Cutting Edge Program, which requires an enhanced food safety program and ongoing demonstration of active managerial control. Verification Visit inspections found in compliance with Cutting Edge program requirements receive an “A” grade.
