Inspection Comments

E&D, class 2 10+ Plumbing inspection was conducted with the owner, Gavin Cooper and contractor, Mike. Construction is at 30% completion. Plumbing stub outs are completed. Per owner, the facility will not obtain chemical dispenser for the mop sink so an additional water stub out for chemical dispenser will not be provided. Reviewed equipment and sink locations. The following items were noted: 1. The dump / blender sink will be indirectly plumbed to the floor sink in the kitchen. Please brace the drainpipe of this sink with metal brackets, slope to drain at ¼” per foot and discharge to the floor sink in the back of the house with minimum 1” air gap. 2. Provide a reduced pressure zone (RPZ) assembly (ASSE 1013) i.e. ¾” LF 009 at the water connection point of the carbonated water kegerator. Provide a drain cup for the device. Drainpipe must be rigid and indirectly discharge to the nearest floor sink with minimum 1” air gap from the finished grade. 3. Provide a vented dual check valve (ASSE 1022) i.e. SD-2 or SD-3 at the water connection point of the hot water dispenser and ice machine. 4. Provide a hot water well (Conserve well) at the boba and gelato station. No County legal action will result from this inspection. Auto emailed the report to the owner. Priority foundation violation is a minor violation that does not directly contribute to an increased risk of foodborne illness but failure to correct this violation may lead to the occurrence of a priority violation.
e.g.- Hand washing soap and paper towels not available at hand wash sink (may lead directly to food employees not properly washing hands when required)
Core violation is a minor violation that relates to general maintenance and sanitation.
e.g. -No sign reminding employees to wash hands
Verification Visits are inspections of establishments enrolled in the MCESD Cutting Edge Program, which requires an enhanced food safety program and ongoing demonstration of active managerial control. Verification Visit inspections found in compliance with Cutting Edge program requirements receive an “A” grade.
