Discussed with owner the proper places for employees to eat and drink. Owner discarded drink cups at time of inspection. Observed cooked rice in steam table measured at 110F. Per owner, rice had been put in table 30 minutes earlier. Discussed with owner the proper procedures for reheating TCS food. Owner put pan of rice on stove to reheat to 165F. TCS food That is cooked, cooled and reheated in a food establishment shall be reheated so that all parts of the food reach a temperature of 165F for 15 seconds.

Observed in walk-in cooler plastic buckets of tripe broth without date marks. Per owner broth had been cooked the day before and would not be used up by the end of the day and would be held over 24 hours. Discussed proper date marking of TCS foods with the owner. Owner put the correct date marks on these buckets of tripe broth at time of inspection. TCS food prepared and held in a food establishment for more than 24 hours shall be clearly marked to indicate the date by which the food shall be consumed or discarded.
