In prep refrigerator on cook line, raw beef, guacamole, and sour cream measured an internal temperature between 46-51'F. Thermometer calibrated on site. Per PIC, items had been there less than 2 hours. Had person in charge place TCS items in walk-in for rapid cooling. Except during preparation, cooking, cooling, or when time is used as a control all PHF/TCS to be maintained at 41°F or less. Ambient air temperature of unit was 47'F per min/max thermometer. Establishment has enough refrigeration on site to continue normal operation.

Core-3-304.14, C: Wiping Cloths, Use Limitation In kitchen, wiping cloth sanitizer bucket measured a chlorine concentration of 0ppm per test strips. Kitchen staff added sanitizer to solution to achieve the proper concentration of 50-100ppm. Please ensure wiping cloths are kept at the proper sanitizer concentration.
