Observe diced tomatoes (51*F) and shredded lettuce (54*F) at sandwich prep cooler across from grill. As per staff the lettuce and tomatoes were brought to sandwich prep cooler less than 2 hours before temperature was taken. Lettuce and tomatoes were placed back into walk in cooler to rapidly cool to 41*F. Within 20 minutes both lettuce and tomatoes were rechecked and at 41*F. Advised manager that temperatures of food must be checked throughout the day to verify they remain at 41*F.

Observed three door sandwich prep cooler with an ambient temperature of 51*F. Cold hold units are to hold temperature control for safety foods (cut leafy greens, diced tomatoes and cheese) at 41*F or lower. Manager removed all temperature control for safety foods from unit and contacted their refrigeration repair company to repair. All temperature control for safety foods will be stored in walk in cooler and small portions on ice until unit can be fixed. Reinspection will be conducted on or before 10/18/2021.

Re-inspection to verify sandwich prep cooler is working correctly to be conducted on or before 10/18/2021
