Observed tamales being cooled at room temperature at 135*-140*F. Observed employee wrap individual tamales and place wrapped tamales in plastic container into walk in cooler. Advised person in charge that tamales should be cooled and then wrapped once tamales are at 41*F or lower.

Verbally discussed Notice of Inspection Rights with Henry G. Emailed copy of inspection report to facility. Emailed copy of 72 hour notice with inspection. Discussed correct Consumer Advisory on menu with person in charge. Only those items that can be undercooked (ie Hamburger, eggs) must be marked. Discussed not mixing soap into sanitizer water for wiping clothes, best practice is to use soap and water to remove dirt and then sanitize.
