Observed diced tomatoes (46*F) and shredded lettuce (47*F) at sandwich prep table. Cold hold foods to be 41*F or lower. As per manager items were placed on unit prior to lunch. Ice was stored into product and temperature dropped to 41*F. Advised person in charge to check temperatures with metal stem thermometer to ensure food stays at 41*F. Tight fitting containers may also assist (no gap for cold air to escape).

Core-3-501.13, C: Thawing Observed frozen meat placed in 5 gallon bucket at room temperature next to walk in cooler. Product was placed in food prep sink with cold running water to defrost. Thawing meats may be completed by thawing under cold running water or in the refrigerator.

During site visit no staff on site with a Certified Food Protection Manager certificate. As of February 2022, all establishments must have a Certified Food Protection Manager on site during normal hours of operation. Core Violation, Correct Prior to next inspection. Discussed leaving food items uncovered when cooling. Once food reaches 41*F cover and date mark.
