Per person in charge (PIC) they were made and placed in the unit early this morning, more than 6 hours prior to inspection. These items were recommended for discard, see embargo form. Reviewed cooling requirements with PIC to ensure foods go from 135°F to 41°F within 6 hours.

See embargo form for a list of these items. Thermometer was calibrated on site. Per PIC, these items had been made over the weekend and were voluntarily discarded. Reviewed cold holding requirements with PIC to ensure foods are kept at or below 41°F.

All food items in the unit measured between 44°F-52°F. PIC called a repair technician while on site to have the unit serviced. Re-inspection will be conducted within 24 hours to verify the unit is working properly. Reviewed cold holding equipment requirements to ensure foods can be kept at or below 41°F while cold holding.
