The person in charge will have it properly cleaned tonight. Discussed increasing the cleaning frequency to prevent future accumulations.

Core-4-101.19, C: Nonfood-Contact Surfaces --Observed a large piece of soiled cardboard hanging on the left side of the shelf near the line reach-in freezer. Per person in charge it is there to prevent items on the shelf from falling. Discussed throwing away the cardboard and having it replaced with something that is corrosion-resistant, nonabsorbent, and a smooth material.
