Manual can open found in holster found with dried food and/or residue build up on blade. Food contact surfaces must be at a frequency of at least every 4 hours or when contaminated. Equipment food-contact surfaces and utensils are to be cleaned throughout the day at least every 4 hours. Properly clean and sanitize food contact equipment at sufficient frequencies. ------------ Manual can opener moved to ware washing area for cleaning at time of inspection.

TCS foods found in refrigerated unit below grill at an internal temperature of 62*F. Cold holding of TCS foods must be held at 41*F or below internally. Per conversation with food employee, foods had been in unit since yesterday, with no monitoring of internal temperatures. Foods in unit were embargoed (see embargo sheet). ------------ Food employee discarded foods at time of inspection. Per PIC, a technician has been contacted for maintenance on above unit and will evaluate all refrigeration equipment. Do not store TCS foods inside unit until unit can maintain foods at an internal temperature of 41*F or below.
