Observed metal sheet pans that were greasy to the touch with remaining stuck-on food debris that were stored away as clean on drying rack in back kitchen dishwashing area, next to 3-compartment sink. Advised person in charge (PIC) that dishware and utensils, which are used for time/temperature control for safety (TCS) foods, must be cleaned to sight and touch to prevent contamination of foods. PIC moved the sheet pans to the 3-compartment sink to be washed, rinsed, and sanitized.

Advised person in charge (PIC) that non-food contact equipment which hold clean containers/utensils must be cleaned at a frequency to prevent debris build-up and does not contaminate clean dishware and utensils. PIC stated they will have the wire racks cleaned.
