PRIORITY VIOLATION-3-501.16(A)(2) and (B), P: Time/Temperature Control for Safety Food, Cold Holding. Observed TCS food items such as egg wash, cooked and raw meats, and cheese; stored outside of refrigeration unit- sitting in a container on top of ice. Food items measured with internal temperatures ranging from 53-60 degrees F. Per kitchen staff, food items had been on counter for less than 4 hours. Ice bath was re-made for rapid cooling. Discussed cold holding and how to properly prepare ice baths to ensure the temperature of food items on the counter does not go above 41 degrees F.

Discussed hot holding and time as control option for pre-cooked sausage patties. Establishment received 3rd consecutive violation for cold holding violation #20 Has voluntarily signed up for AMC training on November 3rd.
