Ambient air temperature of the unit measured at 44°F with min/max thermometer. Employee stated they stocked food items in the morning one hour prior. Directed employee to move these items to other prep top cooler and walk in for rapid cooling. Person in charge called for maintenance to be performed on the unit. Facility has sufficient capacity to cold hold in the meantime. Discussed keeping time/temperature as a control for safety (TCS) foods at 41°F or below. Discussed use of thermometers to perform temperature checks throughout the day to verify proper cold holding is occurring.
