PRIORITY VIOLATION-3-501.16(A)(2) and (B), P: Time/Temperature Control for Safety Food, Cold Holding---Observed the following internal temperatures at breakfast buffet: cut honeydew 54'F, yogurt parfait 69'F, milk 65'F-68'F, PIC stated food had been there for about an hour. Many items were not on ice or ice did not reach all of the food product. PIC instructed to place items on ice. Please ensure to keep time/temperature control for safety food, cold holding at 41'F or below.

PRIORITY VIOLATION-5-205.12 (A), P: Prohibiting a Cross Connection---Observed "Y" valve connected to mop sink faucet. Person in charge called maintenance to have "Y" valve disconnected. "Y" valve had chemical dispenser and hose connected at time of inspection. Please refrain from using "Y" valve; a person may not create a cross connection by connecting a pipe or conduit between the drinking water system and a nondrinking water system or a water system of unknown quality. Core-5-205.15 (B), C: System Maintained in Good Repair; Maintained---Observed right side faucet at 3 compartment sink where clean dishes are stored leaking when turned on. Please repair prior to next routine inspection.

This establishment received a(n) D Grade and had 3 Priority, 0 Priority Foundation and 3 Core violations on this inspection. Due to the violations noted on this inspection report, County legal action may result from this inspection. Discussed using time as a control for morning buffet or any buffet that they have and guidance handouts given to PIC. A pattern of non-compliance for foodborne illness risk factor violation #20, 3-501.16(A)(2) and (B), P has been noted during this inspection. An Active Managerial Control Intervention Plan visit was offered to the person in charge. Failure to correct repeat violations may result in legal action. Core-2-102.12(A), C: Certified Food Protection Manager--Food protection manager certification not available but a chef has taken the exam on 6/19/17 and provided proof at time of inspection. Chef is not sure if he has passed yet. Please have certification available at next routine inspection. Discussed when to wash procedures with PIC and discussed foodborne illness and symptoms as well.

e.g.- Hand washing soap and paper towels not available at hand wash sink (may lead directly to food employees not properly washing hands when required)
Core violation is a minor violation that relates to general maintenance and sanitation.
e.g. -No sign reminding employees to wash hands
Verification Visits are inspections of establishments enrolled in the MCESD Cutting Edge Program, which requires an enhanced food safety program and ongoing demonstration of active managerial control. Verification Visit inspections found in compliance with Cutting Edge program requirements receive an “A” grade.
