Core-2-401.11, C: Eating, Drinking, or Using Tobacco Observed single service cup without s lid stored on meat slicer in on prep table next to walk in cooler. Employee drinks are to be in cups with lids and straw and stored in a common "Break Area". Drink was removed from food prep area.

Observed recently made rolled tacos (80*F) stored on prep table in a large (approximately 8 inches deep) tightly closed plastic container. According the the person in charge the rolled tacos were prepared within the past hour. Container of rolled tacos were split in half and placed uncovered in the walk in cooler to cool rapidly. Foods must be cooled to 70*F within 2 hours and from 70*F to 41*F within an additional 4 hours. Not to exceed 6 hours.

Core-3-304.12 , C: In-Use Utensils, Between-Use Storage Observed large ice scoop for ice machine stored directly on top of ice machine. Storage of utensils between use must be on an easily cleanable prep surface or in an easily cleanable container. Advised manager to keep ice scoop in an easily cleanable container that can be washed at regular intervals.
