Observed large container of carne asada on stove top at 127*F. Hot hold of foods to be 135*F or greater. Grill employee reheated meat to 165*F and held at 135*F. Advised staff to use metal stem thermometer to verify that hot foods remain at 135*F or greater.

No County legal action will result from this inspection. Verbally discussed Notice of Inspection Rights with Denise A. Emailed copy of inspection report to facility. Emailed copy of 72 hour notice with inspection. Discussed with staff to not use sandwich prep cooler at grill line to cool foods such as "Taco Tuesday" Tacos. Items are to be cooled in wall in cooler and placed in prep cooler once cooled.
