Business was in operation with Permit FD-14910 which has been closed out since firm is not preparing any food for wholesale. Operation is continuing to make masa on site at least once a month to sell and for use in preparing tamales for retail sale on site. Operation is preparing beef, pork, chicken, cheese and desert tamales for retail sale. Tamales are formed on weekends and frozen. During the week the frozen tamales are steamed, cooled and stored refrigerated for sale. Operation is also preparing and cooling flan for retail sale. This establishment received a(n) A Grade and had 0 Priority, 0 Priority Foundation and 3 Core violations on this inspection. No County legal action will result from this inspection. Verbally discussed Notice of Inspection Rights with Maria H. Emailed copy of inspection report to facility. Emailed copy of 72 hour notice with inspection.
