Both items were embargoed and discarded. Advised operator to verify temperatures of foods using a metal stem thermometer.

Owner of establishment emptied temperature control for safety foods from unit and placed into the walk in cooler. Advised owner to verify temperatures throughout the day to ensure units are working and able to hold food at 41*F or lower. Reinspection to be completed on or before Aug 12, 2022 to verify refrigerator can hold food at 41*F

Verbally discussed Notice of Inspection Rights with Maria H. Emailed copy of inspection report to facility. Emailed copy of 72 hour notice with inspection. Inspection completed with badge # 134. 2-102.12.(A) Certified Food Protection Manager. During site visit no staff on site with a Certifies Food Protection Manager certificate. As of February 2022, all establishments must have a Certified Food Protection Manager on site during normal hours of operation. Core Violation, Correct by Routine Inspection. Reinspection to be completed on or before Aug 12, 2022 Discussed peeling ceiling tiles in baking area of facility.
