Observed cracked eggs, lobster, steak, chicken, tuna salad, shredded cheese, and cabbage in the reach-in cooler next to the prep line with an internal temperature of 48^F as taken with Thermapen. Time/Temperature Control for Safety Foods shall be maintained at 5ºC (41ºF) or less. Per person in charge, items have been stored in the cooler over 4 hours and were discarded at the time of inspection. Ambient temperature of the unit was measured at 48^F with min/max thermometer. Educated on cold holding temperatures, TCS foods and temperature logs. GM approved purchase of new unit at the time of inspection.
