PRIORITY VIOLATION-3-101.11, P: Safe, Unadulterated and Honestly Presented.--Observed container of lemons in the walk in that contained roughly 20% spoiled lemons. 10 of the lemons were moldy while 6 were shriveled and rotten. PIC was educated on food contamination and the entire container of lemons was discarded at time of inspection. Priority Foundation-3-501.17, Pf: Ready-To-Eat Time/Temperature Control for Safety Food - Date Marking.--In the walk in cooler there were 3 containers of cooked beef without a date mark. PIC stated that the beef was cooked two days prior and the establishment serves enough beef to go through all 3 containers in a 4 day period. PIC was educated on the purpose of date marking. PIC properly date marked the containers at time of inspection. Core-3-304.12 , C: In-Use Utensils, Between-Use Storage--It was observed that a clean knife was stored between use wedged in between a food preparation surface and a steam table. PIC was advised to not store in use utensils wedged in between equipment as that can lead to contamination. PIC properly washed and stored the knife at time of inspection.
