One of these containers was also observed made out of plastic. Person in charge stated that they had been made at 11 am and moved them to reach-in refrigerator to finish cooling, uncovered. Prep tables are not designed for the rapid cooling of food. When cooling foods use the top racks of your two door standing refrigerator or freezers.

Person in charge will replace these unapproved containers with NSF or equivalently rated food safe containers prior to next routine inspection.

Core-6-501.12, C: Cleaning, Frequency and Restrictions-----Observed oil and grease buildup and yellow staining on walls in kitchen, flour and breading covering shelving next to fryers, rice caked on back wall behind rice cooker, flour spilled on floor and underneath shelving in bulk storage area, heavy grease buildup behind hood vent filters and various other areas throughout the establishment in need of cleaning. Person in charge will clean establishment prior to re-inspection on 3/15/19 and replace shelving next to fryers because they are no longer smooth and easily cleanable. Core-6-201.13, C: Floor and Wall Junctures, Coved, and Enclosed or Sealed-----Observed missing coved base all throughout the kitchen and warewashing areas. Person in charge will provide coved base prior to re-inspection on 3/15/19. Recommended using a more durable coved base (i.e. tile or stainless steel) for warewashing areas because of the increased moisture. Core-6-501.11, C: Repairing-Premises, Structures, Attachments, and Fixtures-Methods-----Observed wall underneath 3 compartment sink damaged due to missing coved base. Person in charge will repair prior to re-inspection on 3/15/19. Damage to structure such as holes and cracks should be repaired as soon as possible to prevent further damage and pest harborage conditions.

This establishment received a(n) D Grade and had 1 Priority, 3 Priority Foundation and 7 Core violations on this inspection. A pattern of non-compliance for Priority violation # [13], [3-302.11 (A1-2)] has been noted during this inspection. The person in charge accepted the opportunity to attend the Department’s Active Managerial Control Class. Person in charge was signed up for AMC class on Thursday 3/7/19 from 9 am to 11:15 am. Due to the violations noted on this inspection report, County legal action may result from this inspection. Inspection conducted with RS #691.

Core violation is a minor violation that relates to general maintenance and sanitation.
e.g. -No sign reminding employees to wash hands
Verification Visits are inspections of establishments enrolled in the MCESD Cutting Edge Program, which requires an enhanced food safety program and ongoing demonstration of active managerial control. Verification Visit inspections found in compliance with Cutting Edge program requirements receive an “A” grade.
