PRIORITY VIOLATION-4-501.114, P: Manual and Mechanical Warewashing Equipment, Chemical Sanitization- Temperature, pH, Concentration and Hardness---Found dishwasher dispensing 0 ppm chlorine at time of inspection. Per PIC, dishes had been washed earlier that morning. Upon further inspection, sanitizer bucket responsible for dispensing chlorine to the machine was found empty. PIC replaced chlorine sanitizer at time of inspection and ran the dish machine until food contact surfaces were sanitized between 50-100 ppm chlorine. Priority Foundation-4-601.11(A), Pf: Equipment, Food-Contact Surfaces, Nonfood-Contact Surfaces, and Utensils--- Found tomato slicer food contact surfaces stored in the clean utensil storage area with large pieces of dried food debris from previous uses. PIC will remove dirty utensils to be washed, rinsed, and sanitized before future use.

PRIORITY VIOLATION-3-401.11, P: Raw Animal Foods-Cooking---Observed cook take the internal temperature of a piece of chicken cooked from a raw state while still on the grill top, remove chicken with spatula, and immediately place on a bun intended for a consumer order. Chicken product internal temperature was 157 degrees F with inspector probe thermometer. Chicken must be cooked to 165 degrees F in all parts for 15 seconds. Employee discarded bun and placed chicken product back on the grill top until it was cooked to 165 degrees F.

Sewage & waste water properly disposed
PRIORITY VIOLATION-5-402.13, P: Conveying Sewage---Floor drain in between the walk-in refrigerator and walk-in freezer in the back of the kitchen clogged with sewage even with the floor level at time of inspection. Per PIC, grease mixture had spilled into the floor drain three days ago causing the floor drain to fill with the mixture. Mixture was not running out on to the floor at time of inspection and all other drains were clear. The clogged drain is not normally used or has water run down it. PIC called a plumber at time of inspection to get the drain cleared. Re-inspection required.

Provided and reviewed FDA "Employee Health and Hygiene Handbook" and "Big 6" at time of inspection. No County legal action will result from this inspection.
