PRIORITY VIOLATION-2-301.14, P: When to Wash--- During the time of the inspection the sandwich maker touched her head set and continued to make a ready to eat sandwich without washing her hands. The sandwich and cheese was discarded. The employee washed her hands upon request. Spoke with the PIC about when to wash.

PRIORITY VIOLATION-4-703.11, P: Hot Water and Chemical-Methods; Sanitizing Food-Contact Surfaces--- The establishment uses a QA sanitizing solution. During the time of the inspection the employee was dipping the items that she was sanitizing for only 1 second . The PIC is aware the sanitizer contact time must be at least 30 seconds. The items were placed back in the sanitizing sink.

During the time of the inspection the items had a discard time of 2pm. At 2:35pm the items were still on the line the items were discarded.
