PRIORITY VIOLATION-3-302.11 (A1-2), P: Packaged and Unpackaged Food-Separation, Packaging, and Segregation; Protection From Cross Contamination ------------ Observed a carton of raw shelled eggs being stored over various opened and unopened packages of ready to eat foods, such as lettuce, in the refrigerated make table located in the kitchen area. Observed no signs of cross contamination at time of inspection. The PIC relocated the eggs below at time of inspection. Discussed with the PIC about storing all raw meat and poultry products below ready to eat foods to prevent cross contamination.

PRIORITY VIOLATION-4-501.114, P: Manual and Mechanical Warewashing Equipment, Chemical Sanitization- Temperature, pH, Concentration and Hardness ----------- Observed the bar chlorine warewash machine located at the downstairs bar measuring at 0 ppm after multiple wash cycles. The PIC indicated that the upstairs machine would be utilized until the unit could be serviced. Discussed with the PIC about routinely monitoring all chemical warewash machines to ensure the proper concentration is being dispensed. Core-4-602.11 (E), C: Equipment Food-Contact Surfaces and Utensils-Frequency; Non-TCS --------- Observed two soda nozzles at the bar soiled with black organic matter. The PIC had the nozzles properly cleaned at time of inspection. Discussed with the PIC about cleaning all non-TCS food contact surfaces at a frequency that precludes the accumulation of organic matter.

PRIORITY VIOLATION-3-501.18, P: Ready-To-Eat Time/Temperature Control for Safety Food - Disposition ------------- Observed a container of cooked chipotle peppers with a date mark from 8/30/17 and a container of cooked deli ham with a date mark from 8/31/17 in the refrigerated unit located at the upstairs bar. Both items were past due based upon the inspection date (9/11/17). The products were discarded at time of inspection. See embargo form. Discussed with the PIC discarding all ready to eat, TCS foods held in the establishment for more than 7 days. The initial opened or prepared date counts as day 1, and then the product has 6 days from there.

PRIORITY VIOLATION-7-202.12, P: Conditions of Use ------------- Observed residential grade pest control powder being stored with the chemicals near the mop sink. The PIC removed the product at time of inspection. Discussed with the PIC about utilizing only commercial grade pest spray that is applied by a certified pest control operator to prevent contaminating food and food contact surfaces.

PRIORITY VIOLATION-5-202.11 (A), P: Approved System ----------- Observed the drainage plumbing for the handwash sink located in the kitchen leaking at time of inspection. The PIC indicated that the leak would be repaired prior to re-inspection. Discussed with the PIC about maintaining all drainage plumbing for all sinks in good repair to prevent contamination of food and food contact surfaces. Core-5-205.15 (B), C: System Maintained in Good Repair; Maintained --------- Observed both atmospheric vacuum breakers attached to the mop sinks in disrepair and leaking at time of inspection. The PIC indicated that both items would be replaced prior to the next routine inspection. Discussed with the PIC about maintaining all plumbing systems in good repair to ensure they operate as designed.
