PRIORITY VIOLATION-3-302.11 (A1-2), P: Packaged and Unpackaged Food-Separation, Packaging, and Segregation; Protection From Cross Contamination - In walk-in refrigerator a container of vegetables was being stored under a box of raw cod and an open container of raw salmon. Box of raw cod was also above cooked crawfish. PIC re-arranged so that cross contamination would not occur.

Proper hot holding temperatures
PRIORITY VIOLATION-3-501.16(A)(1), P: Time/Temperature Control for Safety Food, Hot Holding- Cooked sausage in hot holding steam table was between 116-118*F. PIC said it had been there about two hours and item was discarded. Other items on steam table were well above 135*F; PIC will monitor sausage items to make sure they are above 135*F at all times.

Proper cold holding temperatures
PRIORITY VIOLATION-3-501.16(A)(2) and (B), P: Time/Temperature Control for Safety Food, Cold Holding - One two-door refrigerator was holding TCS foods between 44-47*F. Bags of cooked sausage were inside unit and were holding at 44*F. PIC was not sure how long unit was out of temperature and items were discarded. PIC will call service for unit; establishment has adequate alternative refrigeration.

Core-4-501.11, C: Good Repair and Proper Adjustment-Equipment Noted seals for reach-in cooler by grill are in disrepair - seals are loose/ broken and doors do not make a complete seal in areas. Fix as needed to ensure cooler holds TCS food at 41*F or below.

This establishment received a(n) D Grade and had 3 Priority, 0 Priority Foundation and 1 Core violations on this inspection. No County legal action will result from this inspection. A pattern of non-compliance is developing for Priority violation # [13], [3-302.11 (A1-2)], which has been noted during this inspection. An Active Managerial Control Intervention Visit was offered to the person in charge. Failure to correct repeat violations may result in legal action. Discussed with PIC dating requirements for shell stock tags; shell stock tags should be dated with the last date an item from a batch was used or discarded.
