Per Person in Charge (PIC), filet and steak may be served undercooked per customer request. Animal foods that are undercooked must have disclosure by either describing the product as being raw or undercooked (i.e. raw oysters, burgers cooked to order) or by utilizing an asterisk directing them to a footnote that describes the item as being served raw or undercooked. Core-3-501.13, C: Thawing >>> In prep sink near walk-in refrigerator, observed packed raw beef and packaged raw pork thawing at ambient temperature. Proper thawing shall take place under refrigeration that maintains the food temperature at 41*F or less, completely submerged under running water or as part of a cooking process. Person in Charge turned on faucet to continue the thawing process.

Core-2-102.12(A), C: Certified Food Protection Manager >>> No Certified Food Protection Manager (CFPM) at establishment during time of inspection. Per paragraphs 2-102.12(A) and 2-102.20(B) the Person in Charge shall be the Certified Food Protection Manager and per paragraph 2-101.11, a Person in Charge must be present during all hours of operation. Please obtain necessary certificate(s) and maintain at establishment prior to next routine inspection. 3rd consecutive violation. Re-Inspection for Priority Foundation Violation #23 on 4/28/2023. Discussed consistency for date marking procedures and ensuring previous date stickers are removed from containers. e.g.- Hand washing soap and paper towels not available at hand wash sink (may lead directly to food employees not properly washing hands when required)
Core violation is a minor violation that relates to general maintenance and sanitation.
e.g. -No sign reminding employees to wash hands
Verification Visits are inspections of establishments enrolled in the MCESD Cutting Edge Program, which requires an enhanced food safety program and ongoing demonstration of active managerial control.
