Also observed a pot (more than 4 inches deep) with cooked beef (barbacoa) from yesterday 06/30/2019 covered with aluminum foil in the bottom most shelf of the walk in cooler with an internal temperature of 68 degrees Fahrenheit. Both items were placed inside the walk in last night at 8pm it is now 07/01/2019 11 am, more than 6 hours have passed and items did not reach proper cooling temperatures of 41 degrees Fahrenheit, therefore both items were discarded at time of inspection.

Therefore item was discarded. Time control procedures on chicharron was reviewed with new food handling employee.

PRIORITY VIOLATION-7-204.11, P: Sanitizers, Criteria-Chemicals>>>Observed a wiping cloth bucket being used to wipe down cutting boards, the chlorine used to make sanitizing solution was a bottle of 'AWESOME BLEACH with FRESH SCENT'. Solution was discarded and new chlorine sanitizer solution was made using regular, concentrated, no fragrance bleach.
