Observed shredded cheddar cheese, shredded mozzarella cheese, Brie cheese, goat cheese and Havarti cheese in first reach in cooler when entering kitchen all at a temperature of 48-49*F. Person in charge explained all cheese was placed in cooler less than 4 hours prior to taking temperatures. Person in charge informed all temperature sensitive items shall remain at or below 41*F at all times. Person in charge moved all cheese to working reach in cooler.

Observed first reach in cooler when walking into kitchen at a temperature of 50*F used to store products for the day. Person in charge moved all TCS products from cooler to working reach in working cooler. Person in charge informed not to use cooler until it holds a temperature of 41*F or less at all times.

Verification Visits are inspections of establishments enrolled in the MCESD Cutting Edge Program, which requires an enhanced food safety program and ongoing demonstration of active managerial control.
