Discussed with PIC that date marking shall be done within 24hrs of preparing or opening RTE TCS food. Listeria is the pathogen of concern. RTE/TCS can be kept for a max of 7 days when held at 41*F or less. Person In charge (PIC) put adjusted date marks on all items at time of inspection.

Priority Foundation-7-102.11, Pf: Common Name-Working Containers ---- Observed two spray bottles with chemical contents and no labels. Per PIC, one bottle contained a degreaser and the other contained a peroxide disinfectant solution. PIC labeled the bottles at time of inspection. Working containers used for storing poisonous or toxic materials such as cleaners and sanitizers taken from bulk supplies shall be clearly and individually identified with the common name of the material.
