Ground beef stored on same tray as pork items and raw turkey stored over pork items in walk in cooler. PIC relocated all items to proper locations. PIC stated that soup was placed into walk in cooler two and a half to three hours prior to cool and discarded-see embargo form. Ensure PHF/TCS foods are cooled within two hours from 135F to 70F and to 41F within a total of six hours.

Cooked chicken with 11-7 date mark in walk in cooler. Canadian bacon and franks with non-readable dates in walk in cooler. PIC discarded all items-see embargo form. Ensure that ready to eat PHF/TCS foods are properly date marked and are disposed of when date mark has been surpassed.

This establishment received a(n) D Grade and had 3 Priority, 0 Priority Foundation and 0 Core violations on this inspection. A pattern of non-compliance for foodborne illness risk factor violation # 18, 3-501.14 has been noted during this inspection. An Active Managerial Control Intervention Plan visit was offered to the person in charge at the time of inspection. Failure to correct repeat violations may result in legal action. Provided PIC with cooling of PHF/TCS foods handout. No County legal action will result from this inspection.
