Observed deli meat slicer, in back kitchen prep area, with food debris in blade sharpener, blade guard and handle stopper. Deli meat slicer was stored away as clean. Advised person in charge (PIC) that equipment and utensils, which are used to handle/process time/temperature control for safety (TCS) foods, must be cleaned to sight and touch to prevent contamination of foods. PIC had an employee disassemble the deli slicer to be washed, rinsed, and sanitized.

Core-6-501.112, C: Removing Dead or Trapped Birds, Insects, Rodents and other Pest Observed a few dead American Cockroaches in equipment room across from dry storage area and in dry storage area next to walk-in freezer. Advised person in charge (PIC) that areas shall be free of dead pests to prevent the attraction of other pests and contaminate foods. PIC stated they will have the areas cleaned and dead pests removed.

Core-4-501.12, C: Cutting Surfaces Observed cutting boards in kitchen discolored with heavy scoring. Advised person in charge (PIC) that cutting surfaces shall be maintained so they are smooth and easily cleanable. PIC stated they will have the cutting boards re-surfaced or replaced.
