Advised person in charge (PIC) that equipment and utensils, which are used to cook and hold time/temperature control for safety (TCS) foods, must be cleaned to sight and touch to prevent contamination of foods. PIC had employee moved the pan to be washed, rinsed, and sanitized.

Core-3-304.14, C: Wiping Cloths, Use Limitation Observed quaternary ammonia sanitizer concentration in sanitizer buckets in kitchen salad prep area and in server station area, less than 200ppm. Advised person in charge (PIC) that quaternary ammonia sanitizer concentration shall be between 200 - 400ppm. Employee emptied and refilled the quaternary ammonia sanitizer buckets then verified proper sanitizer concentration with sanitizer test strips.

Core-4-601.11, C: Equipment, Food-Contact Surfaces, Nonfood-Contact Surfaces, and Utensils - Observed some food debris crumbs in utensil storage containers where clean dishes are stored. Advised person in charge (PIC) that non-food contact equipment which holds utensils and dishware must be cleaned to sight and touch and at a frequency to prevent debris/residue build-up. PIC moved the utensils containers to the dishwashing area to be washed, rinsed, and sanitized. Additionally, observed rust and debris on wire rack shelves of walk-in refrigerator. Advised PIC that non-food contact equipment which hold containers of food must be maintained in good repair to ensure equipment is smooth and easily cleanable and does not contaminate foods stored below wire rack shelves. PIC stated they will have the wire racks repaired or replaced.
