PRIORITY VIOLATION-3-501.16(A)(2) and (B), P: Time/Temperature Control for Safety Food, Cold Holding --- Observed refrigerator unit near walk in freezer to contain an ambient temperature of 49*F. The following cheeses were found to contain a temperature of 50-53*F: Queso Fresco, Cheddar/Monterrey Jack, Pepper Jack, Blue Cheese, Provologne, cream cheese. Raw shelled eggs and liquid eggs were found to be at a temperature of 49*F. All items were tossed out at the time of the inspection, see embargo form. Please maintain TCS items 41*F or below.
