Core-3-304.14, C: Wiping Cloths, Use Limitation Observed quaternary ammonia sanitizer concentration in buckets in adjacent server kitchens, less than 200ppm. Advised person in charge (PIC) that quaternary ammonia sanitizer concentration shall be between 200 - 400ppm. PIC emptied and refilled the quaternary ammonia sanitizer buckets then verified proper sanitizer concentration with sanitizer test strips.

This establishment received a(n) A Grade and had 0 Priority, 0 Priority Foundation and 2 Core violations on this inspection. Inspection rights verbally reviewed with person in charge, Tommy S. Core-2-102.12(A), C: Certified Food Protection Manager (CFPM): Kitchen did not have a CFPM. Kitchen Manager stated he is currently enrolled in a CFPM course and anticipates completing the course and test soon. Advised Manager that a CFPM certification is required within 90 days of this inspection. 2ND CONSECUTIVE VIOLATION. Observed food left in server kitchen microwave ovens. Ensure cooked food is removed and served immediately from microwave ovens, and clean ovens at least every 24 hours. No County legal action will result from this inspection. Emailed inspection report.
