Per person in charge, boba was made at 2 am and was discarded at the time of inspection. Foods on time as a control must be discarded within 4 hours to prevent bacterial growth. Priority Foundation-3-501.19 (A1, B2, C2-3), Pf: Time as a Public Health Control; Documentation-----Observed boba with no time stamp at the time of inspection. Person in charge made new boba and time stamped at the time of inspection. Foods on time as a control must be labeled with the time they were removed from temperature control to ensure those foods are sold or discarded within the required 4 hour window.

A pattern of non-compliance is developing for Priority violation # [22], [3-501.19 (B1,3-4; C1,4-5)] and # [45], [4-101.11 (A)] which has been noted during this inspection. An Active Managerial Control Intervention Visit was offered to the person in charge. Intervention visit scheduled for 11/5/18 at 3:45 pm. Failure to correct repeat violations may result in legal action. Inspection conducted with Badge #192 No County legal action will result from this inspection.
