Corn on the cob in metal holding pan on stove without contact to direct heat, with an internal temperature of 120-124*F. Person in charge mentioned foods were placed in the unit within 1 hour prior to inspection. All hot temperature controlled foods should be held at 135*F or above. Person in charge turned on burner and reheated corn to reach internal temperature of 185*F to hold at 135*F. Recommended keeping foods on stove with burner on to maintain proper hot holding temperatures.

Obtain food manager certification by next routine inspection. Person in charge stated they are scheduled to take exam in 2 weeks and will reach out upon completion or change of scheduling date. SECOND CONSECUTIVE VIOLATION Discussed establishment procedures regarding: maintenance to walk-in refrigerator, monitoring cooling times and temperatures, usage of thermometer, location of cutting boards, sanitization, and usage of test strips No County legal action will result from this inspection.
