All raw animal proteins must be stored beneath ready to eat food items to prevent cross contamination. The PIC rearranged all items to prevent cross contamination.

All food contact surfaces must be cleaned to sight and to touch prior to being stored as clean. The PIC moved the bowls to be rewashed.

PRIORITY VIOLATION-7-207.11 (B), P: Restriction and Storage-Medicines; Storage -- a bubble pack of allergy medication was stored on a wire rack above clean pans. All medication Must be stored in a designated area away from food contact surfaces and food prep areas to prevent contamination. The PIC moved the medication to a first aid kit. Priority Foundation-7-202.12 (C), Pf: Conditions of Use; Pesticides by certified applicator -- a can of raid pesticides were found in the kitchen. Pesticides may not be stored in a food service establishment and must be applied only by a certified applicator. The PIC discarded the can.

Core-6-201.11, C: Floors, Walls and Ceilings-Cleanability -- A doorway in the dry storage has been damaged, revealing the rough wall and rough wood underneath the wall. Several tiles under the handwashing sink near the walk in fridge have been damage and have standing water in the damaged sections. The cove base in this area has also peeled off of the wall. Several cove base tiles in the bar area are also missing. All floors and walls must be maintained smooth and easily cleanable. Please repair all damage.

Core violation is a minor violation that relates to general maintenance and sanitation.
e.g. -No sign reminding employees to wash hands
Verification Visits are inspections of establishments enrolled in the MCESD Cutting Edge Program, which requires an enhanced food safety program and ongoing demonstration of active managerial control. Verification Visit inspections found in compliance with Cutting Edge program requirements receive an “A” grade.
