Person in charge stated they have a portable sink that they will be using for outdoor grilling. Outdoor grill has not yet been approved. Person in charge is waiting for approval by the City of Phoenix before they can get approval from Maricopa County Environmental Services Department (MCESD) for outdoor cooking. Please contact MCESD when establishment is prepared for a plan review inspection to get approval for outdoor grilling. Priority Foundation-3-501.15 (A), Pf: Cooling Methods Observed hummus cooling in a deep pan on the top level of the food preparation table cooler on cooking line in kitchen. Person in charge moved the cooling hummus to the large reach-in cooler to rapidly cool. Ensure food is cooled completely in the proper cooling equipment before placing the food in the food preparation table cooler for cold holding.

Priority Foundation-4-302.14, Pf: Sanitizing Solutions, Testing Devices Establishment uses a chlorine bleach solution for the sanitizing step of their warewashing process. No chlorine concentration test strips were available in establishment at time of inspection. Person in charge stated they ordered test strips and they are supposed to be delivered either today or tomorrow. Provided a small supply of chlorine test strips at time of inspection. Ensure test strips are always available in order to check the concentration of chlorine in sanitizer solution.
