PRIORITY VIOLATION-3-302.11 (A1-2), P: Packaged and Unpackaged Food-Separation, Packaging, and Segregation; Protection From Cross Contamination Observed eggs in walk-in on shelf above sour cream. Person in charge relocated eggs at time of inspection. It is important to separate foods in a ready-to-eat form from raw animal foods during storage, preparation, holding and display to prevent them from becoming contaminated by pathogens that may be present in or on the raw animal foods.

PRIORITY VIOLATION-4-501.114, P: Manual and Mechanical Warewashing Equipment, Chemical Sanitization- Temperature, pH, Concentration and Hardness In-use hogh temperature automatic dishwasher only reached 152*F on min-max. Ecolab employee adjusted booster then ran max/min again. 2nd run resulted with a temp decrease to 149F. Booster was adjusted again and a 3 run was ran. 3rd attempt resulted with a temp of 162F. Chlorine at eastern most dish machine in bar measured less than 50 ppm. Unit was re-primed and ran again resulting in a correct ppm. PRIORITY VIOLATION-4-602.11, P: Equipment Food-Contact Surfaces and Utensils-Frequency Observed chop slicer with dried food debris on blades and rubber stoppers. Employee stated that slicer hadn't been used all day. Slicer was disassembled and washed at time of inspection. Microorganisms may be transmitted from a food to other foods by utensils, cutting boards, thermometers, or other food-contact surfaces. Food-contact surfaces and equipment used for time/temperature control for safety foods should be cleaned as needed throughout the day but must be cleaned no less than every 4 hours to prevent the growth of microorganisms on those surfaces.

Person charge discarded lettuce at time of inspection. Based on a predictive growth curve modeling program for Listeria monocytogenes, ready-to-eat, time/temperature control for safety food may be kept at 5oC (41oF) a total of 7 days.
