Sliced deli meats above fill line at sandwich prep type refrigerator next to hand sink at 47*F. As per cook, product was refilled from container from walk in cooler that had just been assembled. Cold hold of foods during prep and storage to be at 41*F or lower. Advised that newly portioned product should not ne stored in top area of sandwich prep cooler, This area is best for keeping cold foods cold and not for cooling. Cook removed portion that was added and returned it to walk in cooler to quickly chill.

Verbally discussed Notice of Inspection Rights with Kelly P. Emailed copy of inspection report to facility. Emailed copy of 72 hour notice with inspection. Discussed cooling practices on site with manager and general manager. Provided cooling charts to help assist in verifying cooling practices.
